Coho salmon

The coho salmon, or Alaska silver salmon, is caught in the waters around Alaska.

This fish has a greenish blue back with silvery sides, along with small black spots on the back, dorsal fin and the upper lobe of the tail. Its gum line is white to light grey. When spawning, both sexes have dark backs and heads with maroon or reddish sides.

Excellent when baked, grilled, broiled or smoked, the coho salmon has a fine-texture flesh and is full of flavour.
