Snow crab

Snow crab is also known as white crab or soft shell crab. Its silhouette resembles that of a spider with its five pairs of legs.
It lives in the St. Lawrence Estuary, around Cape Breton Island, off the Newfoundland and Labrador Shelf and in Newfoundland bays.
Its meat is finely textured and delicate. To cook, simply rinse well before plunging the crab into a large pot of salted boiling water. Cook a 1 lb to 3 lb crab for 15 to 20 minutes.
Once cooked, crab meat may be refrigerated for two days.
