Pan fried swordfish with glazed and goji dressing

4 swordfish fillets, square cut

1/3 cup apricot preserves finely diced

2 tbsp. goji berries

½ cup French shallots, finely minced (not chopped)

¼ cup chives, finely minced

½ cup lime juice

1 cup olive oil

Salt and pepper to taste


1. Mix all ingredients and warm in a microwave oven or saucepan just before serving.

2. In a non-stick frying pan heat 3 tbsp. of canola or olive oil on high. When the frying pan is hot and begins to smoke, reduce heat to medium and add the swordfish.

3. Cook half way and turn over. Season.

4. Serve immediately. 

VARIATION: The same recipe may be used for white tuna, red tuna, halibut or Chilean sea bass.
