Roasted monkfish with Thai sauce

4 portions of monkfish

1 tbsp. fresh ginger root puree

3 cloves of garlic

1 tbsp. lemon grass, finely chopped

1 cup 35% cream

1 cup coco milk

2 tbsp. lime juice

2 tbsp. sugar

Salt and pepper to taste


1. Place all the ingredients in a saucepan and allow to reduce by half over medium heat.

2. Place the fish and sauce in a baking dish.

3. Oven bake at 325°F for 45 minutes. Baste with sauce often while cooking.

4. Check for doneness before serving.

VARIATION: The same recipe may be used with all fish.
