Fish with Tamarind Sauce

800 g fish of your choice

4 tbsp. concentrated tamarind sauce

2 cloves of garlic, chopped

2 tomatoes, diced

150 g onion, chopped

10 ml fish sauce

50 ml water

1 Thai hot chili, minced (optional)

Green onion, finely sliced

Bouquet of fresh coriander


1. Grill or pan fry fish until half cooked.

2. Remove and set aside.

3. Brown garlic in same pan.

4. Add tomatoes, onion, fish sauce, hot chili (optional) and 50 ml water with the tamarind sauce.

5. Simmer for 2 minutes.

6. Add green onion.

7. Spoon the sauce over the fish.

8. Garnish with coriander.

9. Cook fish until done and serve.

VARIATION: The same recipe may be used with all fish.
