Niçoise Style Monkfish Medallions

12 monkfish medallions 30 g each

200 ml olive oil

100 g red pepper

100 g zucchini, finely chopped

120 g onion, chopped

300 g tomatoes, diced

2 cloves of garlic, chopped

2 anchovy fillets, chopped

100 g green beans, finely chopped

1 tsp. fresh basil, chopped




1. Heat ¼ cup olive oil in a saucepan.

2. Stir fry beans, red pepper, zucchini and garlic for 5 minutes.

3. Add anchovies and tomatoes and cook for 5 minutes.

4. Add basil and set aside.

5. Heat remaining olive oil in the same saucepan.

6. Fry monkfish medallions 3 to 5 minutes on each side. Add salt and pepper.

7. Place vegetables in a dish and garnish with monkfish.
