Orzo salad with leftover fish and vegetables

6 tbsp. olive oil

2 tbsp. whole-grain mustard

3 tbsp. balsamic vinegar

2 tbsp. maple syrup

2 tbsp. lemon juice (or lime juice)

Italian herbs

Salt and pepper



One package of orzo

Leftover fish without the skin

Leftover vegetables, cooked or raw

Finely-chopped basil to taste

Add your favourite raw vegetables

Add cherry tomatoes, cut in two

Zest of lemon (or lime)


1. In a large pot, cook the pasta in salted boiling water until al dente (according to the instructions on the package).

2. Drain and add some olive oil. Mix and set aside;

3. In a small bowl, mix the ingredients for the dressing. Set aside;

4. Separate the fish into chunks with a fork;  

5. Mix together the orzo, fish and vegetables. Add dressing and mix;

6. Your children will ask for seconds.
