Grouper à la french

Fresh grouper filets (quantity based on number of servings)

4 fresh cobs of corn (or frozen equivalent)

1 red pepper, chopped

1 shallot, sliced thinly

1 tbsp olive oil

2 large pieces of butter

Italian breadcrumbs


1. Use a knife to cut kernels from cobs.

2. In a pan, brown kernels, red pepper and shallot in a piece of butter and a little olive oil. Set aside

3. Coat the grouper filets in breadcrumbs

4. In another pan, heat the second piece of butter and some olive oil to medium high

6. Cook filets on each side 1 to 2 minutes

7. Serve filets over the vegetables, drizzle with olive oil and add a pinch of fleur de sel.


Excellent with lamb’s lettuce salad drizzled with olive oil and seasoned with lemon juice to taste and a pinch of fleur de sel.
