Sunny Blue Marlin



Preparation : 30 minutes max

Level : Intermediate


4 servings

4 blue marlin fillets

2 carrots peeled, cut into juliennes

1 orange (zest and juice)

1 small piece of fresh ginger (equivalent to a teaspoon)

unfiltered coriander oil

1 bunch of green asparagus


Ingredients for dressing:

1/3 cup olive oil

1 tbsp mustard

1 tsp  mayonnaise

juice of a half a lemon 

1 pinch of red pepper

salt and pepper


1. Barbecue your fish on the grill (not too long; the middle must be soft and pink).

2. In a pot of boiling water, blanch carrots cut into juliennes with half the orange zest and the ginger. Drain.

3. Steam asparagus or place on grill and cook.

Aspargus Dressing

4. Mix together the olive oil, mustard, orange juice, remaining zest, lemon juice, mayonnaise and red pepper.

5. Pour coriander oil over the fish to serve.


N.B. On the photo there is a bit too much orange zest (I was helping my daughter with her homework at the same time. Lol!!
