Mr.Girard’s recipe for trout



Preparation : 25 minutes

Level : Intermediate


Salmon trout fillets for four

1 tsp  Fenugreek

1 tsp  Caraway seeds

1 tsp  Coriander seeds

1 tsp. Salt

1 tsp  Sichuan pepper


As an accompaniment: avocado, fig and ground cherry salad

2 Avocados, sliced

2 or 3 Fresh figs, depending on size, cut into pieces

1 container   Ground cherries, cut in 2



1/3 cup Olive oil

1 tbsp Buckwheat honey

2 Limes, juice and zest

A few stems of chopped chives

1 Pinch of Espelette pepper

1 tbsp Mayonnaise

Salt and pepper


1. In a mortar, crush the fenugreek, caraway seeds, coriander seeds, Sichuan pepper and salt.

2. Sprinkle the spice mixture on the fish.

3. Place the fish, skin side down, on aluminum foil and cook on high on the barbecue, on both sides.


Salad and dressing

Combine all the ingredients for the salad. Set aside. Combine the ingredients for the dressing.
