Technicolor salmon tartar

Organic Atlantic salmon

Avocado, kiwi, red pepper, shallot, lemon juice

Chopped mint, lemon-flavoured oil, Dijon mustard, Tamari sauce, croutons

Juice and zest of a blood orange.


1. Place salmon in the freezer for ½ hour.

2. Cut into tartar and return to freezer while preparing remaining ingredients.

3. Cut a day-old baguette of bread into small cubes and cook in lemon-flavoured oil until crisp.

4. Finely dice fruit and vegetables.

5. Mix together all ingredients (do not add too much Tamari).

Serve with a crisp salad seasoned with lemon juice.

The crisp bread, fresh mint, lemon-flavoured oil, blood orange zest! Wow!

Place a small amount of salad on the tartar or beside it, as in the photo.
