Pan fried halibut with crushed herbed tomatoes

4 portions of halibut with skin

2 large, very ripe tomatoes, diced

1 cup red onion, finely minced

½ cup olive oil

4 cloves garlic, finely minced

½ tbsp. Provence herbs

1 bay leaf

1 tbsp. sugar

2 tbsp. black Kalamata olives, coarsely chopped

Salt and pepper to taste


1. In a saucepan, soften the onions in the olive oil.

2. Add the tomatoes and cook over medium heat to a smooth consistency.

3. Add the garlic, olives, Provence herbs, sugar, bay leaf, salt and pepper.

4. Simmer over very low heat for 30 minutes. Check seasoning and serve over the halibut.

6. In a non-stick frying pan heat 3 tbsp. of canola or olive oil on high. When the frying pan is hot and begins to smoke, reduce heat to medium and add the halibut, skin side down.

7. Cook half way and turn over halibut. 

VARIATION: The same recipe may be used with any kind of white fish.
