Ingredients

300 g Nordic shrimp

6 store-bought phyllo pastry sheets

30 g clarified butter

Salt and pepper

120 g pitted black olives

1 tsp. fresh basil

2 tbsp. dried tomatoes

2 cloves of garlic

2 tbsp. olive oil

100 g goat’s cheese (or other cheese of your choice)

Preparation

1. Preheat oven to 350 °F.

2. Olive tapenade: puree the olives, basil, dried tomatoes, garlic and olive oil in a blender or food processor. Set aside.

3. Brush each sheet of phyllo pastry with clarified butter and layer the sheets to form a pastry.

4. Spread the olive puree on the pastry, add the shrimp and crumble cheese over the shrimp.

5. Roll the pastry tightly, fold over edges and bake in the preheated oven for 8 to 10 minutes. ?
