Ingredients

Chilean sea bass (quantity based on number of servings)

Julienned carrots, snow peas and asparagus from Quebec (or other)

Coriander (small bouquet)

Zest of one (1) lime

Breadcrumbs (according to quantity of fish)

4 tbsp olive oil

Preferably fresh herbs (sage, mint, savory, rosemary, lemony thyme ? a little bit of everything)

Red pepper (optional)

Preparation

1. Chop coriander into tiny pieces

2. Mix together the coriander, lime zest, breadcrumbs and a pinch of salt

3. Coat the fish in this mixture

4. Bake in oven at 350°F for 25 minutes

5. Cut vegetables into strips and steam (do not overcook).

 

Huile aromatisée

1. Finely chop fresh herbs, add oil and red pepper (optional) to taste. Add salt and pepper

2. Microwave 1 minute

3. Pour oil onto plate and add fish and vegetables
