Salmon and coriander duos

Grilled salmon

Atlantic salmon fillets (according to the number of servings)

brown sugar or maple syrup

coriander seeds, freshly ground

fleur de sel and Sichuan pepper



Salmon (according to the number of servings)

Fresh coriander, chopped

1 lemon, zest and juice

1 pinch “tutto calabria” chili pepper

1 avocado, cut into pieces

1 tbsp mustard

olive oil

A little bit of mayonnaise

To taste fleur de sel and pepper


Grilled salmon

1. Coat salmon with a mixture of brown sugar (or maple syrup), coriander seeds, Sichuan pepper and fleur de sel.

2. Lay on a sheet of aluminum foil and grill on high heat.



1. Remove skin from salmon, if not already removed at the fish store.

2. Dice and place in a bowl.

3. Add chopped coriander, lemon zest, chili pepper, pieces of avocado, mustard, olive oil, mayonnaise, fleur de sel and pepper, and mix.

4. Before serving, sprinkle well with lemon juice.


And voilà! As a side dish, serve a mustard flavoured lamb’s lettuce salad!
