Ingredients

4 fresh walleye fillets

breadcrumbs

butter

good quantity of chanterelles

4 green onions

2 yellow zucchini, finely sliced

sprigs of fresh lemon-scented thyme

grape seed oil

ground pepper and fleur de sel

Preparation

1. Coat the walleye with breadcrumbs and brown in a well-buttered frying pan about 2 minutes on each side.

2.In another pan, melt butter and brown the chanterelles and whole green onions.

3. Cook the zucchini in grape seed oil and add a good quantity of lemon-scented thyme.

4. Serve and garnish with fleur de sel and pepper to taste.
