Roasted cod with warm lime vinaigrette

4 thick portions of cod

½ cup French shallots, finely minced (not chopped)

¼ cup chives, finely minced

½ cup lime juice

1 cup canola oil

½ cup olive oil

1 tsp. sambal oelek pepper (optional)

Salt and pepper to taste


1. Mix all the vinaigrette ingredients.
2. Place the cod in a baking dish. Season with salt and pepper and drizzle with vinaigrette.
3. Cover the baking dish with aluminum foil and oven bake at 350°F for 30 minutes.
4. Baste fish often while cooking.
Check for doneness and serve immediately.

VARIATION: The same recipe may be used for all white fish.
