Ingredients

4 servings

Atlantic halibut fillets for four

Breadcrumbs

 

Ingredients for the emulsion

3 tbsp Olive oil

1 Orange, juice

1 Lime, juice and zest

1 tbsp Honey

1 Pinch of Espelette pepper

Fleur de sel

Preparation

Coat the fish in breadcrumbs. In a pan, fry the fillets in peanut oil about 45 seconds to one minute on each side (according to the thickness of the fillets). Take care not to overcook the halibut which may become dry.  

To prepare the emulsion, combine all the ingredients and sprinkle with fleur de sel.

Accompany with arugula.
