Ingredients

Mahi-mahi fillets for four

Salt, Sichuan pepper

Zest of one lime

 

Ingredients for the emulsion

Juice of one orange, one clementine, one lemon and one lime

3 tbsp Olive oil

1 Pinch of freshly ground coriander

Salt

 

Ingredients for the salsa

1 Red pepper

1 Green onion

1 Very ripe tomato

2 Kiwis

Olive oil

Salt

 

Shrimp

4 Jumbo shrimp

2 tbsp Olive oil

1 tbsp Brown sugar

1 tsp Sambal Oelek (or more to taste)

1 Green onion, chopped

A few coriander seeds, freshly ground

Salt

Preparation

Emulsion

In a sauce pan over gentle heat, substantially reduce the citrus juice. Then, mix with the olive oil, coriander and salt.

Salsa

Finley dice the fruit and vegetables, add the olive oil and salt. Set aside.

Shrimp

Combine all the ingredients and grill the shrimp on the barbecue.

Mahi-mahi

Sprinkle the lemon zest, salt and Sichuan pepper on the fillets and grill.
