Ingredients

Black cod

Orange: zest, juice and segments

Vanilla pod

Lemon

Honey

Veal stock

Goose fat

Olive oil

Goji berries

Salad burnet

Fleur de sel

Preparation

1. Reduce the orange juice with a small vanilla pod, the veal stock and lemon juice.

2. Add honey and fleur de sel to obtain vanilla caramel.

3. Olive oil + Goji berries + orange zest + salad burnet + fleur de sel.

4. Brown fish in goose fat, but not too long.

 

PLEASE !!!

Serve with an arugula salad + orange segments.

A little bit of olive oil, lemon juice and yellow tomatoes from the secret garden…
