Ingredients

4 portions of salmon with skin

1 egg

1 tbsp. Dijon mustard

2 tbsp. lime juice

3/4 cup canola oil

1/3 cup olive oil

2 cloves of garlic, finely chopped

Saffron to taste (about one 1 g)

Salt and pepper to taste

3 tbsp. chives, finely minced

Preparation

1. Place the egg, mustard, lime juice, saffron, salt, pepper and garlic in an electric mixer.

2. Mix and add the oils progressively and carefully as if making mayonnaise.

3.  Check seasoning.

4. When time to serve, heat the sauce in a microwave oven in 10-second increments. Stir continuously to avoid curdling.

5. Add the finely minced chives.

6. In a non-stick frying pan heat 3 tbsp. of canola or olive oil on high. When the frying pan is hot and begins to smoke, reduce heat to medium and add the salmon, skin side down.

7. Cook half way and turn over salmon.

8. Serve immediately with sauce.


VARIATION: The same recipe may be used with any kind of fish.
