Ingredients

Fresh scallops

Fresh butter

Apricot puree (2 tablespoons)

Tasted pine nuts

Juice and zest of one lemon

White wine

Chives

Fleur de sel

Preparation

1. In a saucepan, combine butter, chives and pine nuts. Deglaze with white wine (2 sips).

2. Add the apricot puree and juice and zest of one lemon.

3. Add more butter if your physician allows you to.

4. Add fresh chives at the end.

5. Serve with a crisp salad!
