Ingredients

One red snapper

Several bay leaves

Papaya

White onion

Swiss chard

Olive oil and grape seeds

Long pepper

Cumin

Chili pepper or bird’s eye chili

Coriander seeds

Zest of one lime

Fleur de sel

Preparation

1. Prepare your flavoured oil with pepper, cumin, coriander, pepper and fleur de sel.

2. Baste the fish with the oil, wrap in bay leaves and place on parchment paper.

3. Bake in oven 15 minutes at 3500F.

 

4. Using a mandolin, slice the papaya.

5. Sauté the white onion in some butter and oil.

 

6. Add papaya and cook on high for 3 minutes.

 

 

7. Slice the Swiss chard and steam.

8. Add a dash of olive oil, zest of lime and fleur de sel.
