Ingredients

Fresh scallops

Prosciutto

Butter

Salsa
Avocado, mango, courgettes, mint, zest and juice of one lime
Good quality olive oil, cayenne pepper, reduction of white balsamic vinegar, fleur de sel.

Preparation

1. Roll up scallops in prosciutto.

2. In a frying pan, cook in butter on high, 4 minutes on each side.

3. Mix together all ingredients for the salsa.
