Ingredients

Lobster

Mushrooms: oyster, Portobello, yellow chanterelles (dried and rehydrated)

Veal stock

Shallots

White wine (Chardonnay)

Estragon

Butter

Sharp cheddar

Celeriac and yellow potato puree (make the puree with butter)

Preparation

1. You will need ramekins.

2. Brown the mushrooms (oyster and Portobello in butter).

3.Fill the bottom of each ramekin with the champignons.

4.In the same frying pan, sauté the shallots.

5.Deglaze with white wine, reduce mixture, add veal stock and chanterelles with their juice.

6.Add lobster in pieces, estragon, salt, pepper and one knob of butter.

7.Spoon the mixture into the ramekins, add puree and sprinkle with cheddar.

8.Bake 25 minutes at 350 0F, then broil top.
