Pan fried scallops with simple white wine sauce

2 tbsp. butter

2 tbsp. flat-leaf parsley, finely chopped

1 clove of garlic, finely chopped

1/3 cup white wine

1/3 cup 35% cream


1. In a non-stick frying pan heat 3 tbsp. of canola or olive oil on high. When the frying pan is hot and begins to smoke, reduce heat to medium and add the scallops.

2. Season with fleur de sel or Guérande and white pepper, preferably milled.

3. Cook 2 minutes, turn over scallops and cook for about 1 minute. Add the butter at the very last moment and spread on scallops for 20 seconds.

4. Set scallops aside in the oven at 275° F.

5. Add the parsley, garlic, wine and cream to the frying pan and reduce for 3 minutes over high heat. Season.

6. Pour over scallops and serve immediately.

VARIATION : The same recipe may be used with all fish.
