Nordic Shrimp on Gazpacho

500 ml canned tomatoes
(Travaglini canned tomatoes available at the Poissonnerie du marché)

50 g red pepper

50 g green pepper

100 g cucumber

50 g white or yellow onion

1 clove of garlic

Salt and pepper

Dash of Tabasco

3 tbsp. champagne vinegar (or rice vinegar)

9 tbsp. olive oil

300 g Nordic shrimp

Your choice of fine herbs (coriander, parsley, basil, etc.)


1. Dice vegetables.

2. Add tomatoes, salt, pepper, Tabasco, vinegar and half the olive oil. Blend in a blender or food processor to desired consistency. Refrigerate.

3. Mix the shrimp with the remaining olive oil and fine herbs.

4. Spoon the shrimp mixture over the gazpacho and serve.
