Dijon Mustard Oysters

Total times : 60 minutes – The longest part of the recipe involves shucking the oysters  

Servings : 2 to 4

16 to 18 oysters

1 tbsp. butter

1 shallot, finely chopped

1 oz. dry white wine

2 tbsp. Dijon mustard

2 oz. of 35% cooking cream

Finely chopped coriander

Salt and pepper to taste


1. Preheat oven to 450 ºF.

2. In a large non-stick frying pan, melt butter on low heat.

3. Add shallot and sauté slowly.

4. Add white wine, mustard, coriander, salt and pepper.

5. Increase heat, add cream and thicken mixture slightly.

6. Pour the mixture over the oysters laid out in an oven-proof serving dish.

7. Bake 4 to 6 minutes until lightly browned.

8. Serve very hot.
