Pasta with mushrooms, lobster and smoked duck

Fresh pasta (quantity based on number of servings)

Frozen lobster meat (ask one of our fish specialists where to find these products at the Poissonnerie) cut into pieces

1 cup of dried, wild mushrooms

Smoked duck (from Maison du gibier or other), cut into small pieces

Green pepper, chopped

1/4 cup flat-leaf parsley, chopped

1 cup asparagus heads

1 shallot, sliced thinly

Quality olive oil

Touch of sherry vinegar

Pinch of Espelette pepper

Pinch of fleur de sel

1 square of butter

¼ cup of pasta cooking fluid



1. Soak mushrooms in water for 1 hour at room temperature.


2. Cook fresh pasta in boiling, salted water.


3. In a pan, brown shallot in butter and a dash of olive oil.


4. Deglaze with a touch of sherry vinegar.


5. Add smoked duck, green pepper, asparagus heads, mushrooms, cooking fluid, lobster and parsley.


6. Add pasta and simmer 2 to 3 minutes.


7. Drizzle with quality olive oil and add salt and pepper to taste.
