Spaghetti and clams



Préparation : 25-40 minutes

Level : Intermediate



¼ cup of pasta cooking fluid                        

20 small, fresh clams (or 2 cans of canned clams)

1 shallot

Juice and zest of 1 lemon     

Bouquet of arugula, chopped

1 avocado, diced

Drizzled olive oil

Pinch of Espelette pepper

Salt and pepper


1. Cook spaghetti and set aside ¼ cup of cooking fluid.

2. Clean and steam fresh clams or drain and set aside canned clams.

3. Sauté the shallot and add cooked clams.

4. Deglaze with cooking fluid.

5. Add spaghetti and lemon juice and zest.

6. Add arugula.

7. Serve spaghetti mixture on plates, add diced avocado, drizzle with olive oil and add a pinch of fleur de sel and Espelette pepper.
