Spaghetti and lobster

4 cooked lobster, chilled, shelled and cut into pieces

1 cup dried boletus mushrooms, rehydrated

5 anchovy fillets (or anchovy paste)

½ cup 35% cream

½ cup frozen peas

1 large handful of spinach (to taste)

1 grey shallot

1 lb long pasta

1 pinch Espelette pepper


1. Soak mushrooms in water for 30 minutes at room temperature.

2. Cook pasta in salted water.

3. Crush anchovies and mix with cream.

4. In a saucepan, cook shallot on medium heat, add the boletus mushrooms, peas, lobster, anchovies, a little water used to soak the mushrooms and, finally, the cooked pasta.

5. At the end, add the spinach and pepper.
