Stuffed squid with Mediterranean chorizo

1 cup quality rice, cooked

1 ½ cup Provencal tomato puree

2 cups Provencal tomato puree to cook the squid (see recipes)

½ chorizo mild or hot, coarsely chopped

3 tbsp. olive oil

2 cloves of garlic

1 cup mixed red and green peppers cubed

3 tbsp. flat-leaf parsley finely chopped


1. Sauté garlic in a saucepan on medium heat for 2 minutes.

2. Add the chorizo and cook for 2 minutes.

3. Add the peppers and cook for another 2 minutes.

4. Add the parsley and pour the mixture into a round-bottomed mixing bowl.

5. Add the rice and 1 ½ cups of tomato puree to the bowl and mix properly.

6. Stuff the squid with the rice mixture. If any mixture remains, spread in the bottom of a baking dish.

7. Place the squid in the baking dish and drizzle with 2 cups of tomato puree. Cover with aluminium foil.

8. Oven bake at 325°F for about 30 minutes.  Turn squid every 10 minutes.
